Every great bar has its characters, and for Garavan’s Bar in Galway, few were as loved and respected as Nicholas Killoury. For more than fifty years, Nicholas was a constant presence behind the bar, greeting locals and visitors alike with his trademark warmth, good humour and genuine care. He was more than a bartender, he was part of the heart and soul of Garavan’s.

Now, we are proud to honour his legacy in the most fitting way we could imagine, with the launch of Killoury’s Irish Whiskey. Available to enjoy by the glass here at Garavan’s, or to take home by the bottle or as part of our beautifully presented Killoury’s Irish Whiskey Gift Set, this release is more than a drink, it is a story in a bottle.

The Story Behind the Bottle

The idea for Killoury’s Irish Whiskey began as a way to ensure Nicholas’s legacy would live on for generations to come. We wanted to capture not only his name, but the warmth, dedication and character he brought to Garavan’s every single day.

We worked closely with talented label designers for months, refining every detail to ensure the bottle told its story before you even took the first sip. We felt it was important – essential, in fact – to have Nicholas’s face on the label. This whiskey is about remembering the man who made everyone feel at home the moment they stepped through our doors.

Every element of the design was chosen with care, from the typography to the colour palette, to create a label that feels classic, distinguished and worthy of the whiskey it represents.

A Triple Blend Crafted with Care

Killoury’s Irish Whiskey is a triple blend of exceptional quality, carefully crafted to reflect the balance and character Nicholas himself embodied. It combines:

  • Double-distilled Irish malt whiskey

  • Single grain whiskey

  • Irish single pot still whiskey

The result is a beautifully balanced profile:

  • Light and crisp with gentle notes of vanilla and cereal

  • A warm, sweet mouthfeel of medium intensity

  • A smooth, lingering finish with layers of nuts, coffee and rich fruit cake

The Launch at Garavan’s Bar

We had a fantastic night at the launch of Killoury’s Irish Whiskey here at Garavan’s. Regulars, friends of Nicholas, and whiskey enthusiasts from far and wide joined us to mark the occasion. The atmosphere was full of energy, with glasses raised in celebration of this very special release.

Guests enjoyed their first taste of Killoury’s neat and also tried our new signature drink, the Superlative – named after Nicholas’s favourite word for the pints and whiskeys he served over the years. Pop into Garavan’s and try one for yourself.
