The Invention and History of Irish Coffee
Origin
The drink's true origin traces back to Foynes, a small town in County Limerick, Ireland. In the 1940s, Foynes was a vital stop for transatlantic flights. On a stormy night in 1943, chef Joe Sheridan created Irish coffee for travelers stranded by weather, blending strong coffee with Irish whiskey and cream. When asked if it was Brazilian coffee, Sheridan famously replied, "No, that’s Irish coffee."
Spread to San Francisco
While other countries like Austria and France had mixed spirits with coffee before, Irish coffee was unique for its use of Irish whiskey. The drink reached San Francisco in 1952, thanks to Stanton Delaplane, a travel writer who enjoyed it in Foynes. He partnered with Jack Koeppler of the Buena Vista Cafe to perfect the recipe. They mastered the technique of floating lightly whipped cream on top, making the drink a hit in the city.
